Gastronomy
The cuisine of the Panna region, famous ever since
medieval times, reaches its highest point with its
Parmigiano-Reggiano (the inimitable Parmesan cheese)
and its choice dressed pork products: Langhirano
ham, Felino salarni, the magnificent Zibello culatello
(the choicest cut), San Secondo cooked shoulder
of pork, Verdi's favourite dish. Among pasta dishes
not to be missed are the " anolini " (a
type of ravioli) served in steaming broth, spinach
and ricotta -filled "tortelli" served
with melted butter and lashings of pannesan cheese,
then the simple "torta fritta"(a type
offried pancake)to be enjoyed hot and crispy, enveloped
perhaps by a slice ofham. Flavoursof old to be rediscovered,
not only in elegant restaurants but also in the
many family-run trattorias located in the surrounding
area on the neighbouring hills. |
